Macaroon Sandwich


These look so yummy and perfect for a nice afternoon dessert with the gals.
And, yes, that is mascarpone in the middle.

Yum! I love creative snacks like this. Recently I saw teeny grilled cheese sandwiches on toothpicks over shot glasses of tomato soup--awesome!

I baked macaroons yesterday for the first time ever, and was so chuffed at the results! Will post recipe and pics at http://therecanbeonlyjuan.com in the coming week.

Mascarpone is so great and versatile. I worked as a chef at this lodge some time ago where the breakfast menu included a buttery oats porridge served with a dollop of mascarpone, fresh strawberries and a drizzle of honey. SO good!

i LOVE macaroons! in the past, i've tried to make them myself!! they were NOT easy to get the texture and puff, but the flavor was delicious nonetheless! i would love to try one with mascarpone in the middle!! yuM!
