A Fit and Lean Meal

 I have created a basic soup that is so good and healthy you will be surprised at how easy it is to make.  
It's light and I like to eat it before a performance or intense rehearsal.

Easy Lentil Soup:

Dice one onion, a few celery stalks, and a few carrot sticks.
Saute in olive oil and salt and pepper until soft.


Add 1 tsp or so of dried thyme and a few bay leaves.


Add one pound of lentils.
Add carton of chicken broth (not stock!) and 4 cups of water.
 Bring to a boil and lower heat to a simmer until lentils are soft (about 45 minutes)




To serve, I often garnish with Italian Parsley or a nice helping of Parmesan.




This soup may not be hot weather material, but I feel healthy and light eating it.
It's a perfect meal before a run, a Shred session, or a performance.

Ooh, lentil soup is one of my favorites - this looks scrummy!

I actually workout right when I wake up in the morning, so I never eat anything - afterwards, however, I drink loads of coffee! :P

lentils are the only sorts of beans that i like, and dannon loves making lentil soups/stews/curries/etc. they're so good for you! i also absolutely LOVE your recipe photos. i said this with the cookies, and i'll say it again - gorgeous! i love the lighting, the colors, and the design. you need to be a food photographer! well, only if it makes you happy {but you easily could if you wanted to, is what i'm saying}. :)

I LOVE lentils. And I think they're so much better the next day, cold. I make a similar recipe.. but yours looks really good. I'll try it out.

Oh, this sounds and looks delicious. A soup is a great idea as a pre-workout snack... I normally have a few cookies or a banana.

This sounds delicious! I'm always thoughtful about what I eat before a big audition-1.5 bananas and lots of berries, for a little sugar and lots of natural beta blockers!

This recipe looks fantastic. I have been trying to eat more lentils lately because I hear they are high in iron and I am deficient...thanks for this!

I actually just had lentil vegetable soup for lunch! The only things I add to mine are tomatoes and sweet potatoes, because they're delicious. It's such a hearty soup and always fills me up and keeps me warm.

I try not to eat before I work out, it either makes me feel like not working out and lying around on the couch, or it makes me feel queasy which nobody needs to feel on a stationary bike!
