Eating Healthy: Bread Salad, Hummus, and Savory Bread Pudding

Despite what my twitter, facebook, pinterest, and blog posts say, I do eat healthy.
It's just that to me healthy foods aren't as fun to talk about.
Want to talk three bean salad? 
Eh.
Oh, boy! Yes!

Besides, reading about a dancer who eats celery sticks for dinner just sounds bad.
Although, with a table spoon or two of peanut butter it is one of my favorite dinners.


I digress (a lot)....

Mr. Branflake loves all salad that doesn't include lettuce.
I have since perfected the bread salad, or panzanella for Italian lovers out there.
Lately, I've been eating this bread salad with a side of cucumbers and hummus.

It was my healthy answer to yesterday's post.





 Bread Salad:
1 loaf crusty bread, cubed
1 bunch basil, chopped
1/2 cup thinly sliced red onions
1/2 cup feta
1 pint cherry tomatoes, cut in half
1 bunch asparagus, quartered 
(or any veggies, really)
salt and pepper
a nice drizzling of olive oil
a healthy dose of Balsamic vinegar

 What's nice about this bread salad is if you find yourself with leftovers you can totally make it unhealthy by turning it into a savory bread pudding. 
Just add some eggs, milk, and extra feta cheese.



 Bake in the oven at 350 until it's no longer jiggly.
Serve warm with a side of steak or roasted chicken and you've got a complete meal.

I love the idea of bread salad - it sounds scrummy. I used to eat tomatoes dipped in Thousand Island all the time - it was a nice snack!

I've never heard of bread salad before! Also I actually really like reading about healthy food (and I definitely should eat more of it) because it gives me ideas of recipes I should try :)

this is GENIUS idea. i literally eat some combination of these things at least a few times a week... i LOVE HUMMUS. but baking it? that sounds amazing. i am making this.

I have never had bread salad. Bread pudding yes but not salad. Sounds delish. A salad without lettuce. Gotta love that. :) xoxo

Hummus is a staple in our diets in our house. Love, love, love hummus. I've also been sneaking kale into smoothies to get some extra veggies...super yummy!

I am sooo glad you shared this! My husband refuses to eat salad for his main meal (unless it's cafe rio, and we all know that ain't healthy ha!) because lettuce is "rabbit food" Seriously, I just want to shake the man sometimes!
I will definitely be trying this salad out though... hopefully he approves :)

Hmm, I may need to try that. I absolutely hate lettuce... which is unfortunate because it causes me to veer away from salad!

I am way too excited to try the bread salad!!! And as much as I love hummus I usually eat it with pita or pretzels or raw green peppers. I always forget to get cucumbers but obviously they would go well together with hummus.

That is why I need to read blogs because they remind me of such wonderful things.

Oh - I love both versions! It's funny...my man doesn't like lettuce, either, but he'll eat greens served creatively.

OK, this salad looks/sounds interesting! i would eat it, but pudding gives me the willies. so....i'll take mine without the pudding.
