Pulled Pork Sandwiches with Coleslaw

Sunday night I cooked for twelve.
I was determined that no one leave hungry so I busted out my easiest yet most fulling meal I have in my arsenal:

Pulled Pork Sandwiches with Coleslaw

It's so easy- just slow cook a hunk of pork with some barbecue sauce for eight hours, make a batch of coleslaw, and put it all on top of your favorite bun.
Bonus: it's a great dinner for the sunnier weather.


Here were the sides:
~Hearty green salad
~Hummus with raw veggies and crackers
~Corn bread muffins
~Biscuits with jam and butter
~Crinkle cut French fries
~Brownies and popsicles for dessert



Pulled Pork 'Recipe'
1 pork butt (hee hee)
4 cups barbecue sauce
Place pork and 2 cups sauce in crock pot for 8 hours.
Shred when done.
Toss with rest of sauce.
(I had to double the recipe for my crew)

Coleslaw recipe:
1 bag coleslaw greens
1/2 cup mayo
1/2 tsp caraway or celery seeds
2 tbs vinegar
1 tsp salt
1 tsp sugar
pepper
1 tsp Dijon mustard

Mix all ingredients together and chill for one hour.




Summertime is calling. 
In the form of pulled pork sandwiches.

YES. pork and slaw together are heaven. i have these pork burgers with cole slaw that are unreal. epicurious. you've got to try it. but this is pretty perfect so maybe you don't have to try it.
