Tomatoes Roasted in Pesto with Lemon Pasta


Did you know that roasting grape tomatoes in pesto produces wonderful things?
I usually roast my tomatoes with olive oil and salt and pepper,
 but I had some leftover pesto and I thought,
"Seems kind of fatty to roast them in olive oil, AND THEN put pesto on the pasta. Why not just roast the tomatoes in the pesto?"

So I did and amazing things happened.





I tell you- my kitchen never smelled so good!
I then added some lemon zest and slices of Meyer lemon to the mix. 
Holy moly!
This dish instantly became a warm-weather fave.

Well doesn't that sound delicious!!! I LOVE Pesto. I can't eat too much of it because it makes me break out, but I allow myself at least 1 or 2 dishes w/ it a month. Pesto pizza is delicious, especially if you mix less pesto w/ the already made tomato sauce.

Adding Lemon? Ooo I'll have to try it! Have a great day!!

What a good idea! Pesto is so versatile - recently used it in lasagna with asparagus (no tomato sauce) - amazing! x

God does this sound good! My mom makes huge batches of fresh pesto from the basil in her garden so we have it year round, but I always love it best right out of the blender in the summertime!

YUM! This sounds like such a great idea. I am trying to eat less pasta (it is my ultimate comfort food!!). Maybe I should experiment with spagetti squash and this recipe? Or may cous cous or quinoa? I haven't gotten quinoa right yet.. but possibly with this? And butter... Yes. that will make it flavorful!
