Getting Ready for Summer the Healthy Way... With Vegetables!



My diet these days is mostly vegetablese. As mentioned before, I'm getting ready for bathing suit season the healthy way with running, weight lifting, and eating whole foods. Therefore, I've been making a lot of egg white scrambles with veggies. Pasta with veggies. Salads. Hummus and raw veggies.

I'm not doing it begrudgingly- I'm actually loving everything I'm eating.

Whole wheat pasta, bell peppers, wilted spinach, and blanched asparagus in a simple Alfredo sauce topped with Parmesan cheese.

Hummus, cucumbers, and spinach seasoned with salt and pepper and lemon.
Piled high on whole wheat bread.

Now, that's not to say I eat healthy all the time. If you couldn't tell from my Instagram, I do eat out a lot. And when I eat out, I go all out. Bacon mac and cheese, carnitas over fries, pad thai and yellow curry... you get the point.

Anyway, I'm looking for meal inspirations. You guys are foodies like me, so I know you have lots of ideas!

What are your favorite go-to veggie meals?
Simple or fancy, I'd like to know!

too funny i posted about Whole30 challenge part 2 - i mainly JUST east veggies, roasted with seasonings :o) .. i REALLLLLLLLLY hope i'm bikini ready Memorial Day weekend!

I'm definitely a veggie-lover. Trying to make sure my little boys are too. Our favorites are definitely pastas, but I'm working on finding other veggie meals they love as well. We're having tons of avocados these days. My favorite sandwich is hummus, cucumber, olive, tomato, feta - on pita bread. Yum!

Delicious!! My husband and I are trying to eat more veggies! As he says, we need to eat more things that grow and less things that walk! :)

Those meals look delicious, and they'd be perfect for me since I'm a vegetarian! In the summer I like to make a spinach salad topped with strawberries and sliced almonds. That's about as fancy as I get, so I don't really have any other suggestions for you :P

Yay, I heart veg, too. I love piling lemony-dressed arugula on a quick TJ's pizza, or making a huge batch of brussie salad and taking it to lunch as a quick side all week. (It holds up well, even when dressed.) And if you burn out on pasta, quinoa is a perfect little grain and a complete protein. Rice-cooker it in salted water with a couple of bay leaves and then add tons of sauteed, blanched or roasted veggies, toasted nuts, cranberries or raisins (but wait, you don't dig fruit...) and a good drizzle of olive oil and balsamic and call it a day. Oh, and add a runny egg to any of those things if you're just feeling like you need a little oomph.

Veggies are awesome. But why just the egg whites? All the nutrition is in the yolk. Don't buy into the low-fat low-cholesterol dogma. Eat the yolks, lady. Your body with thank you. ;)

polenta is a great substitute for pasta! i made a polenta eggplant lasagna once. you just substitute the polenta for pasta and then alternate layers of polenta, eggplant, sauce, and some cheese.

I'm reeaaalllly trying to get more veggies into my life and body, and less animals. I'm not giving up the animals (um, bacon?!), just want to give the greens the lead role, you know? But I'm struggling. My sweet tooth is killing me, specifically the candy jar at the office. Forgot how evil saboteurs the office treats are. Oof. Working through a Hungry Dancer post about this struggle right now, as a matter of fact. Thanks for your encouragement with posts like this... and sunrise, on-the-way-to-the-gym instagrams - get it, Branflakes!

Mine would be anything with zucchini. In the summer I grill zucchini with olive oil, salt, pepper and parmesan cheese right on the BBQ. So good! Avery likes avocados...she'd eat a two or three a day if I let her. And Erik doesn't like vegetables, but he gets them anyway. :)

i just tried brussel sprouts for the first time. pretty good! just cut in half, chop off ends, mix with olive oil, salt and pepper. spread out on foil in a single layer at 400 and roast for 30+ minutes. pretty tasty! although it stank up my house so bad that i am not sure i will ever make them again!

My fave is a salad, pretty much every time. One of the most delicious I've had was made with arugla, strawberries, goat cheese and toasted almonds... but your photo of the avocado on toast looks awfully delish.

oh that food looks great! I'm about to sauté some veggies and quinoa. Your post on clean eating got me started awhile ago--I hadn't heard that phrase before but I followed one link and then another and voila! It makes me feel so good and healthy...when I stick to it!

I'm right there with you (and now even more inspired)! I like to keep it simple but I'm open to good healthy recipes!

Once I get in the habit of eating clean, I love it. Next up, I need to start running. :)
